4 pieces Chicken Breasts
1/4 cup Olive Oil
2 tablespoons Dijon Mustard
2 tablespoons Honey
2 tablespoons Soy Sauce
2 tablespoons Lemon Juice
3 cloves Garlic
1 teaspoon Onion Powder
1 teaspoon Ginger
Method
Start by removing any excess fat from the chicken fillets. Place a piece of plastic wrap or parchment over the chicken on a flat surface and gently pound the thicker sections to create an even thickness.
Put the chicken into a large resealable plastic bag. Add olive oil, Dijon mustard, honey, soy sauce, freshly squeezed lemon juice, minced garlic, onion powder, and freshly grated ginger. Remove excess air from the bag, seal it tightly, and massage the contents to ensure every piece is coated in the marinade. Refrigerate for a minimum of 4 hours, or overnight, flipping the bag occasionally to enhance flavor absorption.
When you’re ready to grill, preheat your outdoor grill to a high temperature, approximately 400°F (200°C), and lightly grease the grill grates to prevent sticking.
Place the marinated chicken on the grill, with the skin-side down. Sprinkle a touch of salt on top. Allow the chicken to cook undisturbed until it easily lifts from the grill and shows beautiful dark grill marks, about 3 minutes. Reduce the heat to medium, around 350°F (175°C), flip the chicken, and cook for an additional 5 to 7 minutes, or until the internal temperature reaches 165°F (73°C). Once done, take the chicken off the grill and let it rest for 5 to 10 minutes before slicing and serving.
