Ingredients

  • 1 cup cornmeal
  • 1 teaspoon baking soda
  • 3 large eggs
  • 1 medium, chopped onion
  • 1 can whole kernel corn
  • 1 can cream-style corn
  • 1 cup buttermilk
  • 1/4 cup, melted margarine
  • 1 can, diced green chiles
  • 3 cups, shredded Cheddar cheese

Method

  1. Begin by preheating your oven to 325°F (165°C) and lightly grease a 9x13-inch baking dish.
  2. In a small bowl, mix together cornmeal and baking soda, then set the mixture aside.
  3. In a large mixing bowl, whisk the eggs until they reach a smooth consistency. Incorporate chopped onions, whole kernel corn, cream-style corn, buttermilk, melted margarine, and diced green chiles, stirring until everything is thoroughly combined.
  4. Gently fold in 2 cups of shredded Cheddar cheese along with the reserved cornmeal mixture, ensuring that only a few small lumps of cornmeal remain visible. Pour this mixture into the greased baking dish.
  5. Place the dish in the preheated oven and bake uncovered for approximately 1 hour, or until the top is golden brown and the casserole has set. After baking, remove it from the oven and sprinkle the remaining 1 cup of Cheddar cheese on top. Let it rest for 15 minutes before serving.
