Ingredients
2 cups tortilla triangles
1 cup oil
1 cup salsa
4 large eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded pepper Jack cheese
Method
Heat a generous amount of oil in a large skillet over medium-high heat. Add the tortilla triangles and fry them until they're beautifully golden and crisp, which should take around 3 to 5 minutes.
