Ingredients
2 tablespoons oil
1 medium onion
2 stalks celery
2 medium carrots
1 teaspoon rosemary
1 teaspoon tarragon
1 teaspoon thyme
2 teaspoons parsley
6 cups chicken broth
2 cups chicken breast
2 cups egg noodles
to taste salt
to taste pepper
Method
In a large skillet, warm a splash of oil over medium heat and sauté chopped onions until they become soft and translucent.
Stir in the diced celery, carrots, and a mix of fresh herbs such as rosemary, tarragon, thyme, and parsley. Cover the skillet and cook until the vegetables are tender, which should take around 5 to 10 minutes.
Transfer the cooked vegetables to a sizable pot and add in the chicken broth. Let this mixture simmer gently on low heat for 30 minutes with the lid in place.
After the broth has simmered, add the cubed chicken breast and egg noodles to the pot, continuing to simmer for another 30 minutes with the lid on. Season the soup with salt and pepper according to your taste.
