This savory cheesy beef casserole combines ground beef, colorful bell peppers, and a blend of cheeses baked to perfection with rice, making it a hearty and comforting dish.

1 pound ground beef
1 medium onion
1 medium green bell pepper
1 medium red bell pepper
2 cloves garlic
1 can diced tomatoes
1 cup tomato sauce
1 packet taco seasoning
1 cup uncooked rice
2 cups beef broth
1 cup Colby cheese
1 cup pepper Jack cheese
Method
Begin by collecting all your ingredients and preheating your oven to 375°F (190°C). Lightly coat a 13x9-inch baking dish with nonstick spray.
In a large skillet over medium-high heat, brown the ground beef along with chopped onions, diced green and red bell peppers, and minced garlic, stirring for about 7 to 10 minutes until the meat is cooked through.
After browning, drain excess fat and season the mixture with salt and pepper. Stir in diced tomatoes, tomato sauce, and taco seasoning until everything is well combined.
Spread uncooked rice evenly at the bottom of the baking dish, then pour beef broth over the rice. Gently mix in the beef and pepper mixture, ensuring it's evenly distributed.
Generously sprinkle shredded Colby cheese and pepper Jack cheese on top of the casserole.
