Ingredients
2 cups beans
7 cups water
2 pounds beef roast
1 cup barbecue sauce
2 tablespoons chipotle peppers
1 bunch fresh cilantro
1 cup cooking wine
4 cloves minced garlic
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon beef bouillon powder
1 teaspoon red pepper flakes
1 teaspoon liquid smoke
Method
Begin by rinsing the beans and adding them to a sizable pot, along with 7 cups of water. Bring the mixture to a vigorous boil and allow it to cook for 10 minutes.
Lower the heat to a gentle simmer, cover the pot, and let the beans cook until they're tender, which should take about 90 minutes. Once cooked, drain the beans.
In a slow cooker, mix the drained beans with 1 cup of water, the beef roast, barbecue sauce, chopped chipotle peppers, fresh cilantro, cooking wine, minced garlic, chili powder, cumin, beef bouillon powder, red pepper flakes, and a hint of liquid smoke.
Set the slow cooker to High and let it cook for 5 to 7 hours, or on Low for up to 12 hours, until the beef is so tender it shreds effortlessly when stirred into the chili. Before serving, stir the chili well to combine the flavors.
