A unique baked sushi creation that combines traditional flavors with a modern twist, perfect for sharing at dinner gatherings.
Ingredients
5 to 10 pieces shiitake mushrooms
3 cups cooked sushi rice
1 tablespoon furikake
1 cup imitation crab meat
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup tobiko
1 cup kamaboko

Method
Start by soaking dried shiitake mushrooms in hot water for 5 to 10 minutes until they become tender.
While the mushrooms soak, reposition the oven rack to about 6 inches from the heat source and preheat the broiler. Lightly coat a 9x13-inch baking dish with cooking spray.
Spread the cooked sushi rice evenly across the bottom of the greased baking dish, then generously sprinkle furikake seasoning on top.
Once the mushrooms are softened, drain and pat them dry to remove excess moisture. In a mixing bowl, combine the mushrooms, imitation crab meat, mayonnaise, sour cream, tobiko, and kamaboko. Stir until well blended and spread this mixture over the layer of furikake.
Broil the dish in the oven for about 15 minutes, or until the top turns a beautiful golden brown. After broiling, cut the dish into 24 equal squares while it remains in the baking dish.
To serve, take a square from the baking dish, place it on a sheet of nori, wrap it loosely, and enjoy immediately.
