Ingredients
1 cup milk
1/4 cup butter
2 tablespoons yeast
1 cup quark
1 teaspoon saffron
1/4 cup sugar
1 teaspoon salt
7 cups flour
1 whole egg

Method
In a small saucepan, warm the milk and butter together until the butter melts completely, reaching a cozy temperature of about 100°F (38°C). Crumble the yeast into a mixing bowl and pour the warm milk over it, stirring until the yeast is fully dissolved.
In the same bowl, mix in the quark, saffron, sugar, salt, and 7 cups of flour. Stir everything together until you have a smooth and shiny dough, gradually incorporating more flour until it pulls away from the sides of the bowl. Cover the bowl and allow the dough to rise for approximately 40 minutes.
Prepare 2 or 3 baking sheets by lining them with parchment paper. Lightly dust a clean surface with flour, then punch down the risen dough and divide it into 35 equal pieces. Roll each piece into a rope about 5 to 6 inches long. Lay the ropes flat and twist the ends toward the center in opposite directions to create a curled S-shape. Place the twisted buns on the prepared sheets, and if you like, sprinkle some raisins on top. Cover them with a kitchen towel and let them rise for another 30 minutes while preheating your oven to 425°F (220°C).
Once the buns have risen, gently brush each one with a beaten egg. Bake in the preheated oven until they are beautifully puffed and golden brown, which should take about 5 to 10 minutes.
