1 teaspoon caraway seeds
1 teaspoon fennel seeds
1 teaspoon anise seeds
1 cup milk
2 tablespoons butter
1/4 cup molasses
2 teaspoons yeast
2 cups all-purpose flour
1 cup rye flour
1 teaspoon salt
1 tablespoon orange zest
Method
Using a spice grinder, blend together caraway, fennel, and anise seeds until they resemble coarse crumbs.
In a sizable saucepan, warm up milk and butter on medium heat, stirring occasionally until the butter melts and the mixture simmers gently, about 5 minutes. Remove from heat and let it cool to around 100°F (38°C).
Incorporate molasses and yeast into the warm milk mixture, allowing it to rest for approximately 5 minutes until it becomes bubbly.
In a mixing bowl, combine 2 cups of all-purpose flour, rye flour, salt, orange zest, and the previously ground spices. Mix until a rough dough starts to form.
Transfer the dough to the saucepan and knead for 5 to 7 minutes, adding more flour if the dough remains sticky.
On a floured surface, continue kneading the dough for an additional 7 minutes until it achieves a smooth and elastic texture.
Place the kneaded dough in a large greased bowl, turning it to ensure it's coated. Cover it with a damp cloth or plastic wrap and let it rise in a warm area for about 1 hour until it has doubled in size.
Prepare a baking sheet lined with parchment paper. Transfer the risen dough onto the sheet, cover it loosely, and allow it to rise for another 1 hour and 30 minutes.
Preheat your oven to 350°F (175°C).
Bake the bread in the preheated oven for 35 to 40 minutes, or until it has a hollow sound when tapped on the bottom and boasts a beautiful golden hue.
