Delight in these charming rustic galettes filled with a medley of summer fruits, perfect for any occasion.
Ingredients
2 pieces pie crusts
1 cup sliced peaches
1 cup blueberries
4 tablespoons flour
4 tablespoons white sugar
1 cup sliced strawberries
6 tablespoons turbinado sugar
Method
Begin by preheating your oven to 450°F (230°C) and line a baking sheet with parchment paper.
Roll out the first pie crust onto the prepared baking sheet, leaving room for a second crust.
In a large bowl, mix together the sliced peaches, half of the blueberries, 2 tablespoons of flour, and 2 tablespoons of white sugar until well combined. Spoon this fruity mixture onto the crust, ensuring you leave a 1-inch border. Fold the edges over the filling, creating pleats for a charming rustic appearance. Sprinkle 3 tablespoons of turbinado sugar over the crust and filling.
Position the second pie crust on the baking sheet alongside the first. In the same bowl, mix the sliced strawberries, the remaining blueberries, another 2 tablespoons of flour, and 2 tablespoons of white sugar. Spread this mixture onto the second crust and fold the edges as you did with the first. Top with an additional 3 tablespoons of turbinado sugar.
Bake the galettes in the preheated oven until the crusts turn golden brown, which should take about 12 to 14 minutes. For an extra touch, you can sprinkle a little more turbinado sugar on top before serving. These galettes can be enjoyed warm or at room temperature.
