Ingredients
1 piece ham bone
enough to cover liters water
1 large, chopped onion
3 cloves, minced garlic
to taste teaspoon ground black pepper
2 cups split peas
2 diced carrots
to taste teaspoon salt
Method
Begin by placing the ham bone in a large cooking pot, then pour in enough water to completely cover it. Heat on high until boiling, then reduce the heat and allow it to simmer gently overnight.
Once the stock has simmered, let it cool slightly. Carefully take out the ham bone along with any excess fat and cartilage, ensuring to retain any tender ham pieces for later.
Return the stock to a boil, then toss in diced onion, minced garlic, and a sprinkle of ground black pepper. Let this mixture simmer for about one hour.
Add in the split peas and chopped carrots, stirring them into the pot. Continue to simmer the soup for at least another hour, letting the peas soften and dissolve into the broth.
Once everything is well combined, adjust the seasoning with salt and pepper to your preference before serving.
