Ingredients

  • 1 cup butter
  • 3/4 cup sugar
  • 1.5 cups all-purpose flour
  • 1 teaspoon vanilla sugar
  • 1 teaspoon baking powder
  • 8 teaspoons raspberry jam

Method

  1. Begin by preheating your oven to 350°F (175°C) and line a muffin tin with 16 cups.
  2. In a large bowl, use an electric mixer to beat the butter and sugar together until the mixture is light and fluffy.
  3. Gradually mix in the flour, vanilla sugar, and baking powder, stirring until the ingredients are just combined.
  4. Divide the dough into two equal halves, then take each half and split it into 8 smaller pieces. Roll each piece into a small ball.
  5. Place each ball into a muffin cup and, with a floured thumb, press down in the center of each to create a small indent.
  6. Spoon a teaspoon of raspberry jam into the indentation of each cookie.
  7. Bake for about 20 minutes, or until the tops are softly golden.
