Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup balsamic vinegar
  • 2 cups strawberries
  • 2 tablespoons honey

  • 4 pieces pork chops
  • 1 tablespoon olive oil
  • to taste teaspoon black pepper

Method

  1. Begin by melting a tablespoon of unsalted butter in a large non-stick skillet over medium heat. Once melted, pour in the balsamic vinegar and let it simmer until fragrant and bubbly, which should take roughly one minute.
  2. Next, add in sliced strawberries, honey, a pinch of salt, and fresh thyme. Stir everything together and let the strawberries soften, allowing the liquid to thicken slightly for about 5 to 8 minutes. Afterward, transfer the mixture to a small bowl and discard the thyme sprigs.
  3. Clean the skillet and return it to the heat. Add the remaining butter along with a splash of olive oil.
  4. Pat the pork chops dry with a paper towel and season them with salt and pepper. Once the butter has finished bubbling, place the seasoned chops in the skillet and sear them for 1 to 3 minutes on each side. Pour the strawberry mixture over the chops, ensuring they are well-coated and topped with strawberries.
  5. Lower the heat and allow the pork chops to simmer until they reach an internal temperature of 145°F (63°C), which should take about 6 to 10 minutes. Optionally, garnish with additional fresh thyme sprigs before serving warm.
