  • 1 cup spelt flour

  • 1 pinch salt

Method

  1. In a large bowl, mix together soy milk, water, melted plant-based butter, maple syrup, and vanilla extract until thoroughly combined.
  2. In a separate bowl, combine spelt flour, sugar, and a pinch of salt. Slowly mix in the soy milk blend to the dry ingredients, stirring until you achieve a smooth batter.
  3. Heat a skillet over medium-high heat. Pour a ladle of batter into the center of the skillet, then tilt and swirl the pan to spread the batter evenly. Cook until the edges are golden brown, about 2 minutes, then carefully flip and cook for another minute.
