This Peanut Chicken Stir-Fry combines succulent chicken with fresh vegetables in a creamy peanut sauce, served over fluffy rice for a delightful meal.


Ingredients

  • 2 cups water
  • 1 cup rice
  • 1/4 cup soy sauce
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon vinegar
  • a pinch cayenne pepper
  • 2 tablespoons olive oil
  • 1 pound diced chicken
  • 2 cloves minced garlic
  • 1 tablespoon grated ginger
  • 2 cups chopped broccoli
  • 1/2 cup sliced green onions

Method

  1. Begin by bringing water and rice to a boil in a saucepan set over medium-high heat. Once it reaches a boil, reduce the heat, cover it, and let it simmer for approximately 20 minutes, or until the rice is tender and has absorbed all the water.
  2. While the rice is cooking, prepare a delicious sauce by combining soy sauce, creamy peanut butter, vinegar, and a dash of cayenne pepper in a small bowl. Set the mixture aside for later use.
  3. In a skillet or wok, heat olive oil on high heat. Add diced chicken, minced garlic, and grated ginger, cooking until the chicken turns a lovely golden brown, which should take around 5 minutes.
  4. Lower the heat to medium and add chopped broccoli, sliced green onions, and the prepared peanut sauce to the skillet. Stir frequently until the broccoli becomes tender and the chicken is fully cooked, which will take another 5 minutes.
  5. Once everything is cooked, serve the peanut chicken and broccoli stir-fry over the fluffy rice.
