Ingredients
1 cup butter
1 piece egg
1 cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons hot water
1 cup flour
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 cup peanut butter
1 cup confectioners' sugar
1-2 tablespoons milk
Method
Start by preheating your oven to 375°F (190°C).
In a large bowl, cream together 1 cup of softened butter and an egg, then blend in 1 cup of granulated sugar, a splash of vanilla extract, and some hot water until the mixture is smooth.
Slowly incorporate the flour, cocoa powder, and baking soda, stirring until you have a uniform batter.
Drop spoonfuls of the batter onto parchment-lined baking sheets and bake for 10 to 12 minutes. Once baked, let them cool completely.
To prepare the peanut butter filling, whip together 1 tablespoon of butter and peanut butter until smooth, then gradually add confectioners' sugar and a splash of milk to reach a creamy consistency.
Once the cookies are cooled, take two cookies and spread the peanut butter filling on the flat side of one, then sandwich with the other cookie. Continue this process with the rest of the cookies.
