A refreshing peach-infused tea treat that combines the sweetness of ripe peaches with the aromatic flavors of your favorite tea, perfect for preserving and enjoying later.
Ingredients
6 pieces peaches
4 bags tea bags
1 cup sugar
6 cups water
as needed cups ice
Method
Begin by bringing a large pot of water to a rolling boil. Prepare an ice bath by filling a bowl with ice and cold water.
Carefully place the peaches into the boiling water for approximately 30 seconds to 1 minute. If necessary, do this in batches. Once blanched, transfer the peaches into the ice bath to stop the cooking process.
After the peaches have cooled, peel off the skins, remove the pits, and cut them into wedges. Pack the sliced peaches into clean, sterilized jars.
In a separate large saucepan, combine tea bags with 6 cups of water and bring it to a boil. Once boiling, take it off the heat and allow the tea to steep for 5 minutes.
Remove the tea bags and stir in sugar until fully dissolved. Add the remaining water to the tea and pour this sweetened tea over the peach wedges in the jars, ensuring the fruit is completely submerged.
Seal the jars tightly with their lids and process them as needed for preservation. Alternatively, you can refrigerate the jars and let the peaches infuse for at least 4 hours or up to a week.
