2 cups diced peaches
2 medium diced bananas
1 cup flour
2 tablespoons flour
2 teaspoons sugar substitute
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup skim milk
1 large egg
1/4 cup corn oil
1 teaspoon vanilla extract
Method
Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking dish by greasing it lightly.
In a large bowl, mix diced peaches and bananas with 2 tablespoons of flour and 1 teaspoon of your chosen sugar alternative, ensuring the fruit is thoroughly coated. Spread this mixture evenly at the bottom of the prepared baking dish.
In the same bowl, combine 1 cup of flour, baking powder, salt, and a dash of cinnamon. Next, add skim milk, an egg, corn oil, the remaining 2 teaspoons of sugar alternative, and a hint of vanilla extract, mixing everything together until well combined.
Carefully pour the batter over the fruit layer in the baking dish, making sure it covers the fruit evenly.
