Preheat your oven to a low temperature of 250°F (120°C) and line a baking sheet with parchment paper for easy cleanup.
Cut the sweet potato into uniform 1/4-inch thick rounds, making sure to halve any larger pieces for even cooking. Spread the slices out on the parchment-lined baking sheet.
Place the baking sheet in the preheated oven and let the sweet potato rounds bake for 1 hour. After the hour is up, carefully flip each slice and continue to bake for another 1.5 hours.
Once the baking process is finished, turn off the oven and let the sweet potato chews cool down completely inside before serving.
