These Nutty Sweet Potato Energy Bites are a delicious and nutritious snack packed with flavor and energy, perfect for on-the-go munching or a post-workout boost.
Ingredients
1 cup mashed sweet potato
1 cup rolled oats
1/2 cup almond flour
1/4 cup hemp seeds
1/4 cup almond butter
2 tablespoons honey
1 teaspoon cinnamon
1 teaspoon vanilla extract
a pinch sea salt
Method
In a large bowl, mix together the mashed sweet potatoes, rolled oats, almond flour, hemp seeds, almond butter, honey, cinnamon, vanilla extract, and a pinch of sea salt until well combined.
Refrigerate the mixture for about 15 minutes to allow it to firm up.
After chilling, scoop out small amounts of the mixture and roll them into balls, aiming for about 20 balls that are roughly 1 inch in diameter.
Place the energy balls back in the refrigerator for an additional 15 minutes to help them set.
Keep the energy bites in an airtight container in the fridge, where they will stay fresh for 3 to 5 days.
