This delightful granola combines a variety of nuts and seeds with dried fruits and a hint of sweetness, perfect for a nutritious breakfast or snack.
Ingredients
1 cup almonds
1 cup walnuts
3 cups oats
1 cup dried apricots
1 cup dried cranberries
1/2 cup honey
1/4 cup olive oil
1/4 cup apricot preserves
1/2 cup wheat germ
1/2 cup sunflower seeds
1/4 cup chia seeds
1/4 cup flax seeds
1/2 cup oat bran
2 tablespoons black sesame seeds
1 teaspoon cinnamon
1 teaspoon vanilla extract
a pinch nutmeg
Method
Start by heating your oven to 325°F (165°C).
Spread almonds and walnuts on a rimmed baking sheet and toast them in the oven for 8 to 10 minutes until fragrant.
In a large bowl, mix the toasted nuts with oats, chopped dried apricots, cranberries, honey, olive oil, apricot jam, wheat germ, sunflower seeds, chia seeds, flax seeds, oat bran, black sesame seeds, cinnamon, vanilla extract, and a hint of nutmeg. Use your hands to combine everything well.
Line another baking sheet with parchment paper. Spread the granola mixture evenly across it.
Bake in the preheated oven for 15 minutes, then stir the mixture and bake for another 15 minutes. Stir again, press the mixture down firmly, and bake for an additional 15 minutes.
Let the granola cool for at least 2 hours to crisp up. Once cooled, break it into chunks and store in an airtight container.
