1 cup buckwheat groats
1/2 cup hemp seeds
1/2 cup chopped almonds
1/2 cup shredded coconut
1/4 cup chia seeds
1/4 cup cacao nibs
1.5 cups almond butter
1/4 cup sugar
1/4 cup honey
a pinch salt
1 cup chocolate chips
Method
Line a 9x13-inch baking pan with parchment paper for easy removal.
In a large bowl, mix together buckwheat groats, hemp seeds, chopped almonds, shredded coconut, chia seeds, and cacao nibs until well combined.
In a separate saucepan, combine 1.5 cups of almond butter, sugar, honey, and a pinch of salt. Heat over low heat, stirring constantly until the sugar has dissolved, which should take about 5 minutes. Fold in the seed and nut blend until everything is well coated, then transfer the mixture to the prepared baking pan and press down firmly.
For the chocolate topping, melt chocolate chips with 1 tablespoon of almond butter in a small saucepan over low heat, stirring until smooth, about 5 minutes. Spread the melted chocolate evenly over the pressed mixture in the baking pan.
