This nut-free sun-dried tomato pesto is a flavorful and creamy sauce, perfect for pasta, sandwiches, or as a dip.
Ingredients
1 cup Sun-dried tomatoes
1 cup Fresh basil
1/2 cup Grated Parmesan cheese
2 cloves Minced garlic
to taste Salt
1/2 cup Olive oil
Method
Start by placing sun-dried tomatoes in a small saucepan and covering them with water. Heat until it reaches a boil, then remove from heat and let them soak for around 10 minutes until they soften. Drain any excess water afterwards.
In a blender, combine the softened sun-dried tomatoes with fresh basil leaves, grated Parmesan cheese, minced garlic, and a dash of salt. Blend until the mixture is well combined.
Slowly drizzle in olive oil, about a quarter cup at a time, while blending to achieve a creamy and smooth pesto texture.
