1 cup dates
1/2 cup chopped pecans
2 tablespoons water
1 medium mashed banana
1 large egg
1/4 cup softened butter
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Method
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine dates, chopped pecans, water, mashed banana, egg, softened butter, and vanilla extract. Blend until the mixture is smooth.
In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt. Gradually add this dry blend to the wet mixture, stirring until everything is well mixed.
Using a spoon, drop dollops of the cookie dough onto the prepared baking sheet, leaving about an inch between each one. Gently flatten the tops with your hand.
