Ingredients

  • 1 cup dates
  • 1/2 cup chopped pecans
  • 2 tablespoons water
  • 1 medium mashed banana
  • 1 large egg
  • 1/4 cup softened butter
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine dates, chopped pecans, water, mashed banana, egg, softened butter, and vanilla extract. Blend until the mixture is smooth.
  3. In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt. Gradually add this dry blend to the wet mixture, stirring until everything is well mixed.
  4. Using a spoon, drop dollops of the cookie dough onto the prepared baking sheet, leaving about an inch between each one. Gently flatten the tops with your hand.
  5. Bake in the preheated oven for 11 to 13 minutes, or until the edges are lightly golden. Once baked, transfer the cookies to a wire rack to cool completely.
