A flavorful Mediterranean dish featuring succulent swordfish topped with a rich sauce of raisins, olives, and tomatoes, baked to perfection.


Ingredients

  • 1 cup raisins
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 can diced tomatoes
  • 1/2 cup sliced olives
  • 1/4 cup pine nuts
  • 2 tablespoons capers
  • 4 pieces swordfish steaks
  • to taste none salt
  • to taste none pepper

Method

  1. Start by soaking dried raisins in warm water for approximately 30 minutes until they plump up. Once ready, drain and set them aside. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat a drizzle of olive oil over high heat. Add in finely chopped onion and minced garlic, cooking until they are soft and aromatic.
  3. Mix in the soaked raisins, diced tomatoes, sliced olives, pine nuts, and capers into the skillet. Cover the pan, reduce the heat to medium, and let it simmer for about 15 minutes, allowing the flavors to blend beautifully.
  4. Season the swordfish steaks with salt and freshly ground pepper. Place them in a lightly greased baking dish and pour the prepared sauce over the top. Bake in the preheated oven for 15 to 20 minutes, or until the fish is firm and flaky.
