A creamy and flavorful hummus infused with sun-dried tomatoes and fresh basil, perfect for dipping or spreading.


Ingredients

  • 3 tablespoons lemon juice
  • ½ cup tahini
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 can garbanzo beans
  • ½ cup olive oil
  • ½ cup sun-dried tomatoes
  • ¼ cup fresh basil
  • to taste paprika

Method

  1. Start by blending lemon juice, tahini, crushed garlic, and salt in a food processor until creamy and smooth.
  2. Add the chickpeas and ½ cup of olive oil, processing until silky, and remember to scrape down the sides as needed.
  3. Gently fold in the sun-dried tomatoes by pulsing until they're finely chopped and well integrated into the mixture.
  4. Mix in fresh basil by pulsing a few times until it’s evenly distributed throughout the hummus.
  5. Transfer the hummus to a serving bowl, creating artistic grooves on top for presentation.
  6. Refrigerate the hummus for at least an hour to allow the flavors to meld beautifully.
  7. Just before serving, drizzle with an extra 2 tablespoons of olive oil and dust with paprika for added flair.
