A delicious and hearty casserole featuring crispy potatoes, seasoned ground beef, and a cheesy topping, perfect for a family dinner.
Ingredients
4 cups diced potatoes
2 tablespoons oil
2 tablespoons taco seasoning
to taste salt
1 pound ground beef
1 cup nacho cheese
1 cup shredded Cheddar cheese
2 tablespoons taco sauce

Method
Preheat your oven to 450°F (235°C).
Boil diced potatoes in a large pot until tender, about 8 to 10 minutes, then drain them well.
In a mixing bowl, combine the drained potatoes with oil, one tablespoon of taco seasoning, and salt. Toss to coat evenly and spread them on a baking sheet.
Bake the potatoes for 20 minutes in the preheated oven until they are crispy and golden brown.
Reduce the oven temperature to 400°F (200°C). In a skillet over medium-high heat, brown the ground beef, stirring often, for 5 to 7 minutes. Add the remaining taco seasoning and drain excess grease if needed.
Layer the crispy potatoes in a casserole dish. Pour half of the nacho cheese over the potatoes, followed by the cooked ground beef. Top with shredded Cheddar cheese and drizzle with taco sauce.
Bake the casserole for another 20 minutes or until the cheese is melted and bubbling.
Serve hot, garnished with sour cream and the rest of the nacho cheese.
