These light and fluffy vegan coconut rice cakes are a delightful treat, perfect for snacking or dessert. Steamed to perfection, they offer a unique texture and delicious coconut flavor.
Ingredients
1 cup rice flour
1 cup water
1 cup coconut milk
1 tablespoon sugar
1 cup tapioca starch
1 teaspoon yeast
1 teaspoon vanilla extract
a pinch salt
Method
In a large mixing bowl, blend together rice flour, water, coconut milk, sugar, tapioca flour, yeast, vanilla essence, and a pinch of salt until the mixture is completely smooth.
Cover the bowl with a lid or plastic wrap and let the batter sit for around 2 hours, or until bubbles begin to appear on the surface. Be sure to give the batter a good stir before using.
Prepare your cake molds by lightly greasing them with oil to prevent sticking. Set a steamer up by placing a steamer basket in a pot filled with water, making sure the water does not touch the bottom of the steamer.
Pour the rested batter into the greased molds, filling them about 1 3/4 inches from the top to allow space for rising.
Bring the water to a vigorous boil, then gently place the molds in the steamer. Cover the pot with a lid and steam the cakes for approximately 10 minutes, or until a toothpick inserted into the center comes out clean.
