These Joyful Sugar Cookies are soft, buttery delights that are perfect for any occasion. They are easy to make and can be shaped into fun designs, making them a favorite for both kids and adults.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • as needed none colored sugar

Method

  1. In a large mixing bowl, combine flour, baking powder, and salt, whisking them together until well blended.
  2. In another bowl, use an electric mixer to beat the butter until creamy. Gradually add in the sugar, mixing until the mixture is light and fluffy. Incorporate the eggs one at a time, mixing thoroughly after each addition, then stir in the vanilla extract.
  3. Carefully fold in the dry ingredients until the dough is just combined, avoiding overmixing.
  4. Divide the dough into two equal portions, shape them into discs, wrap in plastic wrap, and refrigerate for about 1 hour or until firm.
  5. Preheat the oven to 325°F (165°C).
  6. Remove the dough from the fridge and roll out one disc on a floured surface to about 1/8 inch thick. Use cookie cutters to create your desired shapes and place them on baking sheets. If desired, add a sprinkle of colored sugar on top.
  7. Bake for 8 to 10 minutes, or until the edges are a light golden color. Let the cookies cool on the sheets for a few minutes before moving them to wire racks to cool completely.
