Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup pumpkin purée
  • 1/2 cup vegetable oil
  • 1/2 cup coconut milk
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped nuts
  • 1/2 cup shredded coconut

Method

  1. Preheat your oven to 350°F (175°C) and prepare two 8x4-inch loaf pans by greasing them and lightly dusting with flour.
  2. In a spacious mixing bowl, combine the flour, brown sugar, pumpkin purée, vegetable oil, coconut milk, granulated sugar, baking soda, cinnamon, salt, and nutmeg. Mix until everything is well blended and smooth.
  3. Gently fold in the chopped nuts and shredded coconut, ensuring they are evenly distributed throughout the batter. Pour the mixture into the prepared loaf pans.
  4. Bake in the oven for about 75 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and cover with aluminum foil to allow the loaves to steam for around 10 minutes.
  5. After steaming, remove the foil and carefully turn the loaves out onto a wire rack. Lightly cover with foil again and let them cool completely.
