This Irish Delight Loaf is a moist and fluffy bread packed with sweet raisins, perfect for a cozy afternoon snack or dessert.
Ingredients
1/2 cup butter
1 cup sugar
3 large eggs
1/2 cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup raisins
Method
Start by heating your oven to 350°F (175°C) and lightly greasing a 9x5 inch loaf pan, ideally made of glass.
In a large bowl, beat together softened butter and sugar until the mixture is creamy and airy. Add the eggs one at a time, mixing well after each addition, then stir in the sour cream.
In another bowl, sift together flour, baking soda, cream of tartar, and a pinch of salt. Gradually fold this dry mixture into the wet ingredients until just blended, then gently mix in the raisins.
Transfer the batter into your prepared loaf pan, smoothing the top with a spatula.
Bake in the oven for about 50 to 60 minutes, or until a knife inserted in the center comes out clean.
