Ingredients
1 cup chopped dates
1 teaspoon baking soda
1 cup boiling water
2/3 cup butter
1 cup granulated sugar
2 large eggs
1 cup all-purpose flour
1 cup brown sugar
1/2 cup evaporated milk
1 teaspoon vanilla extract
Method
Start by preheating your oven to 350°F (175°C) and grease an 8-inch square baking dish lightly.
In a small bowl, combine the diced dates with baking soda, then pour boiling water over them to ensure they are completely submerged.
In another bowl, beat together 1/3 cup of softened butter and granulated sugar with an electric mixer until the mixture is airy and fluffy. Incorporate the eggs and mix until smooth.
Carefully fold in the flour along with the date mixture (including the water) into the egg mixture until just combined. Pour the batter into the greased baking dish.
Bake in the oven for about 30 to 40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool slightly while you make the toffee sauce.
