Ingredients
1 large sweet potato
2 cups whole wheat flour
1 large eggs
1/2 cup applesauce
Method
Begin by heating your oven to 350°F (175°C).
Prick a sweet potato several times with a fork and microwave on high for approximately 6 minutes until tender. Allow it to cool down.
Cut the sweet potato in half and scoop the soft flesh into a mixing bowl, discarding the skin. Use a fork or potato masher to thoroughly mash the sweet potato, reserving about 1 cup for this recipe.
In the bowl containing the mashed sweet potato, mix in whole wheat flour, eggs, and applesauce. Stir until a cohesive dough forms.
On a lightly floured surface, roll out the dough to about 1/2 inch in thickness. Use cookie cutters to create fun shapes or cut into strips with a pizza cutter. Arrange the shapes on an ungreased baking sheet.
Place the baking sheet in the oven and bake for 35 to 45 minutes, or until the biscuits are nice and crispy. Allow them to cool in the pan for 10 minutes before moving them to a wire rack to cool completely.
