4 cups fresh strawberries
2 cups sugar
1 tablespoon lemon juice
Method
Gather all the essential ingredients for the jam.
In a large bowl, mash fresh strawberries with a fork or potato masher until you have about 4 cups of strawberry puree.
In a heavy-bottomed saucepan, combine the mashed strawberries with sugar and a splash of lemon juice, stirring over low heat until the sugar is completely dissolved.
Increase the heat to high and bring the mixture to a rapid boil, stirring frequently until it reaches a temperature of 220°F (105°C).
To test if the jam is ready, place a small spoonful on a chilled plate and wait 1-2 minutes; if it sets, it’s ready. If not, keep boiling.
Carefully transfer the hot jam into pre-warmed sterilized jars, leaving about a quarter-inch headspace at the top. Secure the lids tightly.
Prepare a large pot with a rack at the bottom, filling it halfway with water. Bring the water to a boil, then gently lower the jars into it.
Add more boiling water to ensure the jars are submerged by at least an inch. Cover and process for 10 minutes.
After processing, take the jars out and let them cool completely on the countertop, spaced apart for 12 to 24 hours. Store in a cool, dark location.
