Ingredients
4 pieces green bell peppers
1 pound ground turkey
1 medium onion
1 cup mushrooms
1 medium zucchini
1 medium red bell pepper
1 medium yellow bell pepper
2 cups spinach
1 can diced tomatoes
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1 teaspoon garlic powder
to taste salt
to taste black pepper
1 tablespoon oil
Method
Preheat your oven to 350°F (175°C).
Gather all your ingredients together for easy access.
Wrap the green bell peppers in aluminum foil and place them in a baking dish. Bake for 15 minutes to soften.
In a skillet over medium heat, brown the ground turkey until fully cooked, then remove it from the pan.
In the same skillet, add a splash of oil and sauté the chopped onion, mushrooms, zucchini, red and yellow bell peppers, and spinach until they're soft and fragrant.
Return the cooked turkey to the skillet and add in diced tomatoes, tomato paste, Italian seasoning, garlic powder, salt, and black pepper. Stir well to combine.
