Ingredients
2 tablespoons olive oil
1 pound ground turkey
1 medium onion
1 medium green bell pepper
4 cups chicken broth
1 tablespoon tarragon
2 medium carrots
2 medium red potatoes

1 cup barley
Method
Heat a generous splash of olive oil in a large pot over medium-high heat. Add the ground turkey and sauté, breaking it apart, until it turns golden brown, which should take about 3 to 4 minutes.
Stir in the finely chopped onion and diced green bell pepper, cooking until the onion softens and becomes translucent, roughly 3 minutes.
Pour in the chicken broth, then add the fresh tarragon, sliced carrots, and cubed red potatoes. Raise the heat to bring the mixture to a boil.
Once boiling, reduce the heat to medium-low and let the stew simmer for about 20 minutes, stirring occasionally, until the potatoes are fork-tender.
Season the stew with salt and pepper to taste, then mix in the barley. Allow it to simmer until the barley is cooked through and tender, which will take about 15 minutes.
