Ingredients
2 large sweet potatoes
1 piece egg
2 cloves minced garlic
1 teaspoon salt
a pinch none nutmeg
1 to 1.5 cups all-purpose flour
Method
Preheat your oven to 350°F (175°C).
Arrange the sweet potatoes on a baking sheet and roast them for approximately 30 minutes, or until they become tender. Let them cool for 15 to 30 minutes after baking.
Once cooled, remove the skins from the sweet potatoes. In a large bowl, mash the sweet potato flesh until it's smooth, or use a ricer for an even finer texture. Mix in an egg, minced garlic, salt, and a dash of nutmeg.
Slowly add flour to the sweet potato mixture, mixing in small amounts until a soft and manageable dough forms.
Bring a large pot of water, lightly salted, to a rolling boil.
While waiting for the water to boil, shape the gnocchi: on a floured surface, roll the dough into long, slender logs and cut them into 1-inch pieces.
Gently drop the gnocchi pieces into the boiling water. They are ready when they float to the top. Use a slotted spoon to transfer the cooked gnocchi to a warm serving platter until you're ready to enjoy them.
