Ingredients

  • 1 cup sun-dried tomatoes

  • 1 small onion
  • 1 cup fresh basil
  • 1/2 cup parsley
  • 2 cloves garlic

  • 2 tablespoons vinegar
  • 1 tablespoon red wine
  • 2 tablespoons tomato paste
  • 1/4 cup olive oil
  • 1/2 cup Parmesan cheese

Method

  1. Begin by soaking sun-dried tomatoes in warm water for approximately 5 minutes to soften them.
  2. In a food processor, combine the softened sun-dried tomatoes, pine nuts, diced onion, fresh basil, parsley, and minced garlic. Process until the mixture is smooth.
  3. Add crushed tomatoes, vinegar, red wine, and tomato paste into the mixture, blending until you achieve your desired consistency.
  4. Slowly drizzle in olive oil while blending, then fold in the grated Parmesan cheese. Season with salt and pepper according to your preference.
