A delightful baked dish featuring tender chicken, savory mushrooms, and creamy rice, all brought together with a blend of herbs and cheese.
Ingredients
2 cups uncooked rice
1 cup portobello mushrooms
1 can beef consomme
1 can French onion soup
1/4 cup butter
1 cup shredded cheese
4 pieces chicken pieces
to taste none salt
to taste none pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
for garnish none fresh parsley
Method
Start by preheating your oven to 350°F (175°C).
In a spacious baking dish, combine uncooked rice, diced portobello mushrooms, beef consomme, and French onion soup, stirring until well incorporated.
Add small dollops of butter throughout the mixture and top it with 3/4 cup of shredded cheese.
Season the chicken pieces with salt, pepper, garlic powder, onion powder, and paprika. Arrange the seasoned chicken over the cheese and butter mixture, then sprinkle the remaining cheese on top. Cover the dish with aluminum foil.
Place the dish in the oven and bake for 55 minutes. After that, remove the foil and continue to bake until the top is golden brown, the rice has absorbed the liquid, and the chicken is thoroughly cooked, which should take an additional 20 to 30 minutes. If desired, garnish with freshly chopped parsley before serving.
