This flavorful and creamy gratin combines tender slices of sweet potatoes with a rich herb-infused cheese sauce, making it a perfect side dish for any dinner.


Ingredients

  • 2 pounds sweet potatoes
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons butter
  • 3 cloves garlic
  • 2 tablespoons parsley
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 teaspoon rosemary

  • to taste black pepper
  • 1 cup Gruyère cheese

Method

  1. Begin by preheating your oven to 400°F (200°C) and lightly coat a 9x13-inch baking dish with cooking spray.
  2. In a medium saucepan set over medium heat, combine the cream, milk, butter, and minced garlic, stirring until it reaches a gentle simmer. Once simmering, take it off the heat and mix in the chopped parsley, thyme, sage, rosemary, salt, and freshly ground black pepper.
  3. Place half of the sliced sweet potatoes in the bottom of your prepared baking dish. Drizzle half of the creamy herb mixture over the top, then sprinkle with half of the Gruyère cheese. Repeat the layering process with the remaining potatoes, cream, and finish with the last of the cheese on top. Cover the dish with aluminum foil.
  4. Bake the gratin in the preheated oven for 30 minutes. After this initial baking time, remove the foil and bake for an additional 15 minutes, or until the sweet potatoes are tender and the top is bubbling and golden brown. Allow the dish to cool for 10 minutes before serving.
