Ingredients

  • 2 whole acorn squash
  • 4 tablespoons unsalted butter
  • 4 tablespoons brown sugar
  • 2 cups stuffing mix
  • 1.5 cups chicken broth
  • to taste none salt
  • to taste none black pepper
  • to taste none garlic powder
  • to taste none onion powder

Method

  1. Preheat your oven to 400°F (200°C).
  2. Slice the acorn squash in half and arrange the halves cut-side up in a baking dish.
  3. In each squash half, place 2 tablespoons of unsalted butter and sprinkle 2 tablespoons of brown sugar.
  4. Fill the center of each half with 1 cup of savory stuffing mix, then add 3/4 cup of chicken broth to moisten.
  5. Season generously with salt, freshly ground pepper, garlic powder, and onion powder according to your taste.
  6. Cover each half with aluminum foil to retain moisture.
  7. Bake in the oven for approximately 60 minutes, or until the squash is fork-tender and deliciously caramelized.
