Delightful herb-infused popovers that are crispy on the outside and soft on the inside, perfect for any gathering or as a light snack.
Ingredients
4 tablespoons olive oil or butter
1 cup flour
1 cup milk
3 large eggs
2 tablespoons chopped chives
2 tablespoons fresh dill
1 pinch salt
Method
Begin by preheating your oven to 425°F (220°C). Generously grease a 12-cup popover pan with 1 tablespoon of melted olive oil or butter, then place the pan in the oven for about 5 minutes to warm it up.
In a mixing bowl, combine 3 tablespoons of olive oil or butter, flour, milk, eggs, finely chopped chives, fresh dill, and a pinch of salt. Whisk until the mixture is smooth and well blended.
Once the pan is heated, carefully fill each popover cup with the batter, filling them halfway to allow for expansion during baking.
Bake the popovers for 25 minutes, avoiding opening the oven door to keep the heat intact.
After baking, remove the pan from the oven and use a sharp knife to pierce a small hole in the top of each popover to release the steam. Serve warm with a drizzle of canola oil or a pat of butter.
