This Hearty Vegetable Samosa Bake combines mashed potatoes, peas, and bell peppers wrapped in a flaky pie crust, making it a delightful savory dish perfect for dinner.
Ingredients
2 medium potatoes
1 cup peas
1 medium bell pepper
1 bunch fresh coriander
to taste none fresh mint leaves
2 pre-made pie crust
enough for boiling water
a pinch none salt
Method
Start by heating your oven to 400°F (200°C).
In a pot, add water with a bit of salt and bring it to a boil. Once boiling, toss in the diced potatoes and cook until tender, about 12 minutes. Drain and mash them to a slightly chunky texture.
Mix in the peas, chopped bell pepper, and fresh coriander into the mashed potatoes until everything is well combined.
Place one layer of pie crust into a 9-inch pie dish, then fill it with the potato and vegetable blend. Top it off with fresh mint leaves for added flavor.
