Ingredients

  • 2 medium potatoes
  • 1 cup peas
  • 1 medium bell pepper
  • 1 bunch fresh coriander
  • to taste none fresh mint leaves
  • 2 pre-made pie crust
  • enough for boiling water
  • a pinch none salt

Method

  1. Start by heating your oven to 400°F (200°C).
  2. In a pot, add water with a bit of salt and bring it to a boil. Once boiling, toss in the diced potatoes and cook until tender, about 12 minutes. Drain and mash them to a slightly chunky texture.
  3. Mix in the peas, chopped bell pepper, and fresh coriander into the mashed potatoes until everything is well combined.
  4. Place one layer of pie crust into a 9-inch pie dish, then fill it with the potato and vegetable blend. Top it off with fresh mint leaves for added flavor.
  5. Cover the filling with another layer of pie crust, pinching the edges together to seal the filling inside.
  6. Bake the pie in the hot oven for around 15 minutes, or until the crust turns a beautiful golden brown.
