This Hearty Sweet Potato Shepherd's Pie combines a creamy sweet potato topping with a savory filling of ground meat and vegetables, baked to perfection for a comforting family meal.
Ingredients
4 medium sweet potatoes
2 tablespoons margarine
1 teaspoon black pepper
1 pound ground meat
1 medium green bell pepper
2 cloves garlic
1 tablespoon flour
1 cup vegetable stock
1 cup peas
1 cup corn
1 cup carrots
Method
Preheat your oven to 400°F (200°C).
Peel and dice the sweet potatoes, then cook them in boiling water for around 15 minutes until they are tender.
Drain the sweet potatoes and return them to the pot. Incorporate margarine and half of the freshly cracked black pepper, mashing them until they reach a creamy consistency. Set aside.
In a large non-stick skillet, heat some oil over medium heat. Add the ground meat, chopped green bell pepper, and minced garlic, sautéing for about 5 minutes until the meat is browned.
Sprinkle flour over the meat mixture, stirring thoroughly and allowing it to cook for another minute.
Introduce the vegetable stock, bringing the mixture to a boil while stirring continuously.
Stir in the peas, corn, and diced carrots along with the remaining black pepper, ensuring everything is well combined.
Pour the filling into an 8-inch square baking dish and evenly layer the creamy mashed sweet potatoes on top.
Bake in the preheated oven for approximately 15 minutes, or until the edges start to bubble.
