This hearty casserole combines the natural sweetness of sweet potatoes with savory sausage and creamy eggs, making it a perfect dish for brunch or a wholesome meal.


Ingredients

  • 2 cups grated sweet potatoes
  • 3 tablespoons coconut oil
  • 1 cup sausage
  • 1 medium, chopped onion
  • 6 large eggs
  • 1 cup coconut milk
  • 1 teaspoon sage
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Method

  1. Begin by preheating your oven to 350°F (175°C) and lightly coat a baking dish with coconut oil.
  2. Evenly layer the grated sweet potatoes at the bottom of the prepared baking dish.
  3. In a medium skillet, heat two tablespoons of coconut oil over medium heat. Add in the sausage and chopped onion, cooking until the sausage is golden brown and the onion is soft and translucent, which should take about 5 minutes. Pour this mixture over the sweet potatoes in the baking dish.
  4. In a mixing bowl, whisk together the eggs, coconut milk, sage, salt, pepper, and garlic powder until everything is well blended. Pour this egg mixture over the sausage and sweet potato layer in the baking dish.
  5. Bake the casserole in the preheated oven for around 45 minutes, or until the eggs are fully set and the top has a lovely golden hue.
