This Hearty Stuffed Meatloaf Extravaganza is a savory delight that combines ground beef and stuffing for a delicious main dish, topped with a sweet and tangy ketchup glaze.
Ingredients
1 pound ground beef
1 cup stuffing mix
1/2 cup water
1 large egg
1 teaspoon salt
1 teaspoon poultry seasoning
1 cup ketchup
2 tablespoons brown sugar
Method
Gather all your ingredients and preheat the oven to 350°F (175°C). Prepare an 8- x 4-inch loaf pan by lining it with double-layered aluminum foil, leaving a 3-inch overhang on the long sides. Lightly coat the foil with cooking spray and set the pan on a baking sheet.
In a large bowl, mix together ground beef, stuffing mix, water, egg, salt, poultry seasoning, and half a cup of ketchup. Use your hands to combine everything gently until just mixed.
Spoon the meat mixture into the prepared loaf pan, pressing it down to form a compact shape.
Bake in the preheated oven for about 35 minutes, or until the top is a lovely golden brown and the edges are bubbling.
While the meatloaf is baking, prepare a sauce by whisking together the remaining half cup of ketchup and brown sugar in a small bowl until smooth. Once the meatloaf is finished baking, spread this sauce evenly over the top.
Return the meatloaf to the oven and continue baking until a meat thermometer inserted into the center reads 160°F (71°C), which should take an extra 10 to 15 minutes. Once cooked, take it out and let it rest for 5 minutes.
Using the foil overhang, carefully lift the meatloaf from the pan and place it on a cutting board. Slice it into 8 portions for serving.
