Ingredients
2 tablespoons oil
4 cloves garlic
4 cups chicken stock
1 whole turkey leg
2 bunches collard greens
to taste none salt
to taste none pepper
1 teaspoon red pepper flakes
Method
Heat a generous amount of oil in a large pot over medium heat. Add minced garlic and sauté until it becomes fragrant and golden, about one minute.
Add chicken broth to the pot and place a turkey leg inside. Cover the pot and let it simmer for around 30 minutes to infuse the flavors.
Introduce the collard greens to the pot, increase the heat to medium-high, and cover. Cook while stirring occasionally until the greens are wilted, which should take about 45 minutes.
Reduce the heat to medium. Season with salt and pepper according to your taste. Cover the pot again and let the greens cook until they are tender and vibrant, taking an additional 45 to 60 minutes.
Once fully cooked, drain the collard greens while reserving some of the cooking liquid. For a kick of heat, stir in some red pepper flakes. Use the reserved liquid to reheat any leftovers.
