This hearty individual omelette combines sautéed vegetables and turkey bacon for a flavorful breakfast option, topped with melted Cheddar cheese and rolled up like a burrito.


Ingredients

  • 1 tablespoon butter
  • 1/2 cup mushrooms
  • 2 slices turkey bacon
  • 1/4 cup green bell pepper
  • 1/4 cup onion
  • 2 large eggs
  • to taste pinch salt
  • to taste pinch pepper
  • 1/4 cup Cheddar cheese

Method

  1. Begin by melting butter in a nonstick skillet over medium-high heat. Once melted, add in chopped mushrooms, diced turkey bacon, green bell pepper, and onion. Sauté the mixture for 3 to 4 minutes until everything becomes tender and aromatic, then transfer it to a plate.
  2. In another bowl, whisk the eggs with a dash of salt and pepper until they are completely blended.
  3. Return the skillet to the stove, then pour the egg mixture into the pan, making sure it spreads evenly across the surface. Distribute the sautéed vegetables and bacon mixture over the eggs, topping it off with a sprinkle of Cheddar cheese. Cook for around 5 minutes or until the eggs are set.
  4. Gently slide the omelette onto a serving plate and roll it up from one end, creating a burrito shape. Cut it in half and savor your delicious creation!
