These hearty breakfast tortilla rolls are filled with savory sausage, fluffy scrambled eggs, and melty cheese, all topped with a rich gravy and baked to perfection.


Ingredients

  • 1 pound Sausage
  • 6 large Eggs
  • 1/2 cup Green chiles
  • 6 large Tortillas
  • 1 cup Cheese
  • 1/4 cup Flour
  • 2 cups Milk

Method

  1. Heat a large skillet over medium-high heat and cook the sausage until it's nicely browned. Drain the excess fat, but keep a couple of tablespoons for later use, then set the sausage aside.
  2. In the same skillet, add the eggs along with green chiles and scramble them until fully cooked through.
  3. Prepare a baking dish (9x13 inches) by lightly greasing it. On a clean surface, lay out the tortillas and fill each one with a portion of the cooked sausage, the scrambled eggs, and a sprinkle of cheese. Roll them up tightly and arrange them seam-side down in the greased baking dish.
  4. Using the reserved sausage drippings, heat them in the skillet and mix in the flour. Stir well, then gradually pour in the milk while continuously stirring until the mixture thickens into a creamy gravy.
  5. Pour the prepared gravy over the rolled tortillas and bake in a preheated oven at 350°F (175°C) for about 10 to 15 minutes, or until the gravy is bubbling and heated through.
