Ingredients

  • 2 pounds beef stew meat
  • 1 cup ale
  • 1 medium, diced onion
  • 2 tablespoons Worcestershire sauce
  • 2 cloves, minced garlic
  • 2 tablespoons, chopped parsley
  • 1 teaspoon thyme
  • to taste salt
  • to taste pepper
  • 2 medium, diced potatoes
  • 1 cup, sliced mushrooms
  • 2 ready-made pie crusts

Method

  1. Start by placing the beef stew chunks, ale, and chopped onion in a large saucepan. Heat gently over low flame, allowing the mixture to simmer for about 30 minutes until the beef becomes tender.
  2. As the beef cooks, preheat your oven to 400°F (200°C).
  3. Once the beef is tender, enhance the flavor by adding Worcestershire sauce, minced garlic, chopped parsley, thyme, salt, and pepper. Incorporate the diced potatoes and sliced mushrooms, then raise the heat to medium. Cover the pan and cook until the potatoes are tender, which should take around 10 to 15 minutes.
  4. In a small bowl, mix a bit of the cooking sauce with flour until you achieve a smooth paste. Stir this back into the beef and vegetable mixture, letting it simmer until the sauce has thickened.
  5. Prepare a 9-inch pie plate by fitting one pie crust into the bottom and up the sides. Pour the hot beef mixture into the crust, then cover with the second pie crust. Cut a few slits in the top to allow steam to escape and crimp the edges to seal.
  6. Bake in the preheated oven for 35 to 40 minutes, or until the crust is golden brown and the filling is bubbling.
